LES ESPIAS – Chenin Blanc

Description

LES ESPIAS Chenin Blanc is a 100% Chenin Blanc originating from Molina, Curicó Valley. The vineyard features 34-year-old vines grown in a trellis system, and the soil, of alluvial origin, boasts a high content of rounded rocks, along with deep soils. The vines are masal ungrafted, and the vineyard utilizes furrow irrigation. Harvesting occurred during the last week of March.

After a meticulous grape selection, the grapes were pressed, and the obtained juice underwent vinification in a combination of eggs and Flex tanks with a capacity of 1,000 liters. Alcoholic fermentation took place with native yeasts from the vineyard, accompanied by brief pumpovers to homogenize the container contents and provide essential nutrients to the yeasts. Temperature control was maintained to prevent it from exceeding 63-68°F.

Once alcoholic fermentation concluded, the resulting wine rested in contact with its lees, undergoing monthly movements based on tasting evaluations. The aging process extended for 8 months in contact with lees, with the final bottling taking place on November 23, 2021. The result is a production of 5,275 bottles.

COLOR Light yellow with golden reflections.

NOSE Notes of fruits such as hazelnut, apricot, peach, pear, complemented by a touch of butter.

TASTE On the palate, it is a light and easy-to-drink wine with balanced acidity.

 

It is recommended to serve at no more than 12°C. This wine is ideal for pairing with cheeses, pastas, fish, sushi, and chicken. It also complements dishes with a sweet and sour flavor profile.
